Blueberry Banana Almond Butter Smoothie Bowl

Gluten Free, Dairy Free, Vegan

There is so much goodness packed into this smoothie bowl I wasn't sure what to even call it! Hence the long name! During my pregnancy, as soon as I hit my second trimester, all I wanted was smoothie bowls (okay and pizza and icecream and oatmeal raisin cookies....and... lol). So, this recipe was born out of necessity! You must give the pregnant woman what she wants! haha Packed with fruits, veggies, protein and fibre it's healthy, filling and makes for the perfect breakfast! Hope you enjoy it as much as I do!

Serves 2-3

Ingredients

  • 4 handfuls of spinach (I pack a lot in)

  • 1 tbsp chia seeds

  • 1 scoop Vega vanilla protein powder* 

  • 1 tsp arrowroot powder*

  • 1 heaping tbsp of almond butter

  • 1 tsp fresh ginger

  • 7 slices of frozen zucchini (about 1/4 inch rounds)

  • 1 medium frozen banana

  • 1 package frozen acai berry

  • 1/2 cup frozen blueberries

  • 1/2 cup unsweetened milk of choice (I use oat milk)

 Toppings

  • fresh berries

  • granola (Gluten Free if needed)

Directions

  • Add all the ingredients to a full size, high speed blender. Blend until thick and creamy. This will take you a few minutes and you'll have to scrape down the sides with a spatula at least 3 times. 

  • Pour into bowls and top with fresh berries and granola.

Notes:

  • Feel free to use whatever protein you like. If you don't want to use protein powder I suggest adding in a few Tbsp of Hemp seeds and/or an additional scoop of almond butter. You may need to change the amount of milk you add to get the right consistency. 

  • Arrowroot powder helps to thicken the smoothie. Feel free to omit. 

  • ***Make sure you have frozen zucchini and banana. This helps to create a thick and creamy consistency. I wash and slice zucchini into 1/4 inch rounds and keep them in a frozen zip lock. Same goes for the banana- Peel, slice and store in a zip lock in the freezer. 

  • Frozen Acai packs are hard to find!!!! I found mine at "Whole Foods" & "Choices" grocery stores in the freezer section. If you can't find acai packs, just substitute an extra 1/2 Cup frozen blueberries or mixed berries. 

  • If you don't have a full size high speed blender, try cutting the recipe in half. 

  • I like my smoothies thick, so you definitely need to work with this using a spatula as mentioned in the directions. Depending on your blender you may need to add more milk.
