Blueberry Banana Overnight Oats

The perfect fast and easy breakfast to make the healthiest start to your day - the ‘cooking’ is done in the fridge overnight, just grab and go in the morning!
Serves 1
Ingredients
1 large very ripe banana
1 tablespoons chia seeds
1/4 teaspoon cinnamon
1/2 cup gluten-free rolled oats
3/4 cup almond milk
1/4 teaspoon pure vanilla extract
(optional: 1 tsp maca powder, 1 heaping Tbsp protein powder)
Suggested Toppings:
Fresh or Frozen Blueberries (or other desired fruit)
Coconut flakes
1 Tbsp Gogi Berries
Chopped Cashews or walnuts
Scoop of coconut yogurt
Directions
In a small bowl, mash the banana until smooth. Add the chia seeds and cinnamon stir until combined.
Mix in the oats, almond milk, and vanilla. Cover and refrigerate overnight, or a minimum of 2 hours.
In the morning, stir the oat mixture to combine. If the consistency is still too runny you can add an additional 1 tablespoon chia seeds and place back in the fridge until it has thickened up. If the oat mixture is too thick, add a splash of milk and stir to combine.
