Chewy Coconut Date Bars
Dairy Free, Gluten Free, Nut Free, Refined-Sugar Free, Vegan
These granola bars are sweet, chewy and oh so delicious! Not only are they full of protein, fibre, and healthy fats but they have no refined sugars! Packed with nutrients that will keep you full and full of energy!
Makes approximately 16 bars
Ingredients
2 tbsp chia seeds (plus 6 tbsp of water)
2 large ripe bananas
1 cup coconut oil, melted
1/3 cup unsweetened apple sauce
1/4 cup maple syrup
1 tsp pure vanilla extract
1 cup dates, pitted
2 cups rolled or quick oats (use Gluten-Free if needed)
1 cup unsweetened coconut flakes
¾ cup sunflower seeds
¼ hemp seeds
¼ cup cacao nibs
1 ½ tsp cinnamon
1 tsp fine sea salt
Instructions
Preheat the oven to 350 degrees F.
In small bowl, mix together chia seeds and water. Set aside or a few mins to form a gel.
Using a food processor or blender, combine the bananas, chia seed mixture, melted coconut oil, maple syrup and dates. Transfer this into a large mixing bowl.
Add all remaining ingredients until stir until well combined.
Line a large baking dish (approx 9x12) with parchment paper. Pour the mixture into the pan and spread around with spatula until smooth and even.
Bake for approximately 30mins until golden brown on top. Remove from oven and let cool completely.
Take the granola bars out of the pan by lifting the parchment paper. Cut into bars of your desired size! Store in an airtight container in the fridge for about 2 weeks, or freezer for 3 months.
