Hearty Minestrone Soup

We have my mom to thank for this delicious recipe! Perfect for a cold, dreary day this soup is loaded with vegetables & hearty stuffed tortellini. Super easy to make and great for the whole family! Both kids & adults will be fighting for seconds. 

Serves 4

Ingredients:

  • 1 tbsp Extra Virgin Olive oil

  • 1 cup yellow onion, chopped

  • 2 large cloves garlic, minced

  • ½ cup carrots, chopped

  • ½ cup parsnips, chopped

  • 4 cups vegetable broth

  • 2 tbsp tomato paste

  • ½ tsp salt

  • 1 tsp tried basil

  • ¼ tsp pepper

  • 1 ½ cups cherry tomatoes, halved

  • 1 cup frozen tortellini (I used Kale & Ricotta*) 

  • 2-3 large handfuls of spinach

Directions: 

  1. In a large pot, heat the oil over medium heat. Add the onions & garlic & cook until soft, about 5 mins.

  2. Add the carrots, parsnips, vegetable broth, tomato paste, basil, salt and pepper. Bring soup to a boil and then reduce heat to medium low and cook for 12-15mins or until the vegetables are just tender. 

  3. Stir in the tomatoes & tortellini, cover and cook for another 5mins or until pasta is heated through. 

  4. Add spinach and cooked for 1min. 

  5. Serve in bowls and enjoy! 

*Tips:

  • I like to double the recipe and make a large batch of soup so I can freeze half!

  • * Feel free to use whatever tortellini you’d like!
