Hearty Minestrone Soup

We have my mom to thank for this delicious recipe! Perfect for a cold, dreary day this soup is loaded with vegetables & hearty stuffed tortellini. Super easy to make and great for the whole family! Both kids & adults will be fighting for seconds.
Serves 4
Ingredients:
1 tbsp Extra Virgin Olive oil
1 cup yellow onion, chopped
2 large cloves garlic, minced
½ cup carrots, chopped
½ cup parsnips, chopped
4 cups vegetable broth
2 tbsp tomato paste
½ tsp salt
1 tsp tried basil
¼ tsp pepper
1 ½ cups cherry tomatoes, halved
1 cup frozen tortellini (I used Kale & Ricotta*)
2-3 large handfuls of spinach
Directions:
In a large pot, heat the oil over medium heat. Add the onions & garlic & cook until soft, about 5 mins.
Add the carrots, parsnips, vegetable broth, tomato paste, basil, salt and pepper. Bring soup to a boil and then reduce heat to medium low and cook for 12-15mins or until the vegetables are just tender.
Stir in the tomatoes & tortellini, cover and cook for another 5mins or until pasta is heated through.
Add spinach and cooked for 1min.
Serve in bowls and enjoy!
*Tips:
I like to double the recipe and make a large batch of soup so I can freeze half!
* Feel free to use whatever tortellini you’d like!
