Mango Guacamole

Dairy Free, Gluten Free, Vegan, Refined-Sugar Free

This guacamole will knock your sandals off! Trust me when I say it’s so good and ridiculously easy to make. It’s the perfect snack with tortilla chips and is a great addition to tacos and burgers!

Makes about 3-4 cups

Ingredients

  • 3 ripe avocados

  • Juice of 2 limes

  • 1/3 cup red onion, diced

  • 1 ripe Mango, peeled and diced

  • ½ Jalapeno, finely diced

  • handful of chopped cilantro

  • 2 tbsp gogi berries (optional but highly recommended!)

  • Sea salt to taste

  • Pepper to taste


Directions

  1. Slice Avocados in half and remove pit. Spoon out the flesh and place in a medium bowl with lime juice. Mash with a fork until smooth. 

  2. Add in remaining ingredients. 

  3. Serve with Tortilla chips (I like Que Paso)

 

Tip: Avocados and Mango should be soft and tender to touch. If they’re not ripe enough your guacamole won’t turn out.
