Slow Cooker Apple Cinnamon Oatmeal

Gluten Free Option. Dairy Free

This recipe is soooooo easy!!! Make a batch of it on Sunday and you’ve got breakfast all week for the whole family! Just reheat and serve with your favorite toppings such as maple syrup, yogurt, berries, nuts, etc. 

Serves approx. 12

Ingredients

  • 2 ½ cups steel cut oats (gluten free if necessary)

  • 4 cups water 

  • 4 cups unsweetened almond milk (or milk of choice) 

  • ½ cup dried raisins

  • ½ cup dried Gogi berries (cranberries, currents, mulberries would also be great!) 

  • 1 tbsp ground ginger

  • 1 tbsp ground cinnamon 

  • apples, cored & chopped

Optional Toppings:

  • maple syrup or honey to your preferred sweetness

  • fresh berries, sliced pear or banana

  • dollop of coconut yogurt

  • crushed walnuts or pecans

Directions

  1. Lightly oil the sides of the slower cooker pot. This prevents a hard crust from forming.

  2. Add all ingredients to the slow cooker, cover and cook on low for 4-5 hours, stirring halfway through. 

  3. To serve: reheat individual portions, thinning with more milk if needed. Sweeten with desired amount of maple syrup or honey, and top with a dollop of yogurt, berries, or anything else your heart fancies!

Tips

  • This makes a HUGE batch. Feel free to cut in half if needed.
