Regan’s Spicy Cauliflower Tacos with Lime Avocado ‘Mayo’

Dairy Free. Vegan. Gluten Free Option.

Life is better with tacos!!! And this veggie packed version is bursting with flavours. Who knew cauliflower could be so versatile!

Servings: 4+

Ingredients

Spicy Roasted Cauliflower

  • 1 head cauliflower, cut into florets

  • 2 tbsp olive oil

  • ½ tsp fine seat salt

  • ½ tsp smoked paprika

  • ½ tsp onion powder

  • ½ tsp garlic powder

  • ¼ tsp cayenne

  • fresh ground pepper

Lime Avocado “Mayo”

  • ½ cup raw cashews

  • ½ cup water

  • juice of 1 lime (about 2 Tbsp)

  • 1 small avocado

  • sea salt

  • fresh ground pepper

  • ½ tsp cayenne

  • ½ tsp honey (or for vegan option try agave)

Tacos:

  • tortillas (use corn for gluten free option)

  • shredded cabbage (red or green)

  • 1 large red pepper, cut into thin strips

  • 1 mango, peeled and cut into thin strips

  • extra limes

Instructions

  1. Prepare the cauliflower: Preheat oven to 350 degrees C. In a small bowl, stir and combine all the spices. Place cauliflower florets in a large bowl and toss with olive oil and spices.  Spread on a large baking sheet covered in parchment paper. Roast for about 30 mins or until cauliflower is tender and golden brown.

  2. Meanwhile prepare the Lime Avocado “Mayo”:  using a high speed blender or immersion blender, combine all ingredients and blend until smooth. Adjust the spices to your liking. Chill in the fridge until you’re ready to eat.

  3. Fill the tortillas with avocado mayo, cauliflower bites and desired toppings.

Tips: Feel free to use whatever toppings you like!
